Fruit Cake fresh batch from Oct 26

There's a fruit cake somewhere in every Australian Christmas, and this is 
a very good one. It weighs a full kilo, which is enough to keep cutting 
into right through to New Year.

It's dark and dense, heavy with sultanas, raisins, currants and mixed 
peel, with red cherries and warm spice running all the way through. It's 
made with rum essence instead of rum, so it can sit in the middle of the 
table and everyone gets a slice.

Buy it early and let it wait in the tin. Cut it thin with coffee on 
Christmas morning, or bring it out in the afternoon with a sharp cheddar 
when everyone swears they couldn't eat another thing. They will.
